Today's recipe is for Rotel Cheesy Dip.



Here's what you will need:
2 cups or 1 package of your favorite cheddar cheese
1 can Rotel Tomatoes drained
(I use mild, but you can use hot)
1/2 cup of mayo
a dash of creole seasoning (optional)

Mix all the above together in a bowl. 




Serve with your favorite tortilla chips.
Super easy.  Super good.

So this weeks recipe is one of my favorites to make.  I can't take credit for it, I got it from The Pioneer Woman website.  It is called Sour Cream Noodle Bake.  You have got to follow the recipe exactly for it to turn out right (trust me on this one).



This is what mine turns out looking like.  The only thing I have been doing different is using the new Kraft cheese with the Philadelphia Cream Cheese in it.  It seems to make it a lot creamier.

Turkey Burgers with Gravy
and
Easy Peezy Rice





Start with a box of frozen turkey burgers.




Fry in some olive oil, a few minutes on each side.  No need to fry them all the way through as you are going to be cooking them in the crock pot.






While you are cooking the burgers on each side, whisk 2 cups of water with 2 packs of turkey gravy mix.




Place the turkey burgers in the crock pot, cover with the gravy mix, and add some saute'd onions on top.  Cook on high 2 1/2 to 3 hours.




All done.  Serve over Easy Peezy Rice, recipe follows.


Easy Peezy Rice




Start by coating the inside of a small crock pot with oleo/butter.




Add a cup of Uncle Ben's parboiled rice, and two cups of water.





Mix in some garlic salt and a couple more dollops of butter.  Mix well.

Cook for about 2 to 2 1/2 hours on high.  Stir occasionally to prevent sticking together.





End result:  The best rice you have ever tasted.  Enjoy.

Eclair Cake


I have decided to start posting a recipe every Wednesday.  This weeks recipe is Eclair Cake.  My mom use to make this recipe all the time.  I myself have been making it for years.


What you will need:  8 oz container of cool whip, 2 packs of instant vanilla pudding, 1 package of graham crackers, 4 cups of milk, and 1 container of milk chocolate frosting.





Whisk 4 cups of milk and the 2 packages of pudding mix together in a large bowl.




Fold in the container of cool whip.




In your container, start with a layer of graham crackers, add half the pudding mixture.  Repeat with a layer of graham crackers, and repeat with remaining pudding and graham cracker layers.  End with a graham cracker layer on top.




Remove lid for icing, and all of the foil seal.  Heat in microwave 20-30 seconds until melted. 




Pour over top layer of graham crackers and smooth out.  Refrigerate over night and enjoy.
